Kullu's food is pahadi comfort food at its best — the cuisine has been influenced by the rugged terrain and cold climate, requiring high-energy foods, perfected using locally sourced ingredients like lentils, rice, and a variety of greens. Very different from plains food — simple, hearty, and deeply flavourful.

Must-Try Signature Dishes

Siddu (The King of Kullu Food) — A local bread made from wheat flour, steamed and often filled with poppy seeds, walnuts, and other ingredients; served with ghee or lentil soup. It has always been popular in Kullu, Manali, Shimla, Mandi, and Rohru. Absolute must-try — nothing like it anywhere else.

Kullu Trout Fish — The fish is marinated and cooked with minimum spices to retain the taste and nutrients. Pan-fried in mustard oil and topped with a light lemon-onion sauce. The British introduced brown trout and rainbow trout into rivers like the Beas in the early 1900s, and they've become an important part of Himachali cuisine since. Best paired with steamed rice and boiled veggies.

Dhaam (Traditional Thali) — A complete meal composed of spicy curry of red kidney beans, fried dal, aromatic rice, boor ki kadi, curd, sweets, salad, and jaggery. Usually prepared by special chefs called 'botis'. This is the festive feast of Himachal — try it at any local wedding or festival season.

Babru — A type of flatbread or puri made with black gram filling, deep-fried until golden. Crispy on the outside, soft on the inside. Best enjoyed with tamarind chutney or chana madra, especially during cold winter months with a hot cup of tea.

Chha Gosht — Lamb marinated and slow-cooked in a gravy made of gram flour and yogurt. The flavour comes from traditional spices like coriander powder, asafoetida, bay leaves, clove, and red chilli powder. Heaven for meat lovers.

Other Local Favourites

Madra (Chana Madra) — Made with soaked chickpeas cooked in oil with cloves, cinnamon, cardamoms, cumin, coriander powder, and turmeric. Creamy, aromatic — the soul of Himachali vegetarian food.

Tudkiya Bhath — A savoury one-pot meal made with rice, lentils, potatoes, yogurt, and a special mix of spices like mace, cardamom, and dagad phool (stone flower). Mountain-style pulao — warming and filling.

Patande — A sweet dish similar to pancakes, prepared with wheat flour and enjoyed with honey. Think of it as Himachali breakfast pancakes.

Aktori — A pancake-like dish made from buckwheat flour, cooked in ghee until golden, slightly sweet and filling. Traditionally prepared during religious occasions. Try it if you're visiting during any festival.

Aloo Palda — A luscious potato curry cooked in yogurt with a delightful blend of sweetness and subtle sourness. Simple but addictive.

Mittha — A sweet dish of sweetened rice mixed with dry fruits and raisins, prepared on special occasions. The Himachali dessert.

Momos & Thukpa — Tibetan influence is strong in the higher regions. Available everywhere from street stalls to restaurants.

Pro tip: Kullu food is best experienced at local dhabas and during festivals — not fancy restaurants. The highway dhabas between Mandi and Kullu serve some of the best Siddu and Rajma-Chawal you'll find. And if you're there during Kullu Dussehra (October), Dhaam is served everywhere — don't miss it.
